Zupa Tuscana Soup
(Moto's Father's Interpretation of the Olive Garden's Recipe)
(Makes 4 Servings)
(2) 10¾ oz cans (condensed potato soup)(1) 16 oz can chicken broth (full strength)2 cups of milk 1 medium/large onion, chopped ½ lb ground Italian sausage¼ tsp crushed red pepper 3 Tbsp butterDirections:1/3 package thawed frozen chopped kale or chopped collard greensSimultaneously:-- In a 2 quart pot, saute onion and red pepper in butter until tender (do not overcook)-- In a skillet, brown sausage. Keep it "loose" and drain grease after cookedCombine:Add potato soup, chicken broth, milk, sausage and onions in pot. Heat on low/medium heat until hot (not boiling). Add thawed frozen kale or collard greens. Turn heat down and simmer for about 15 to 20 minutes. Salt and pepper to taste.
