White Cooked Shrimp

White Cooked Shrimp
(Microwave - Makes 2 to 4 Servings)

16 fresh shrimp in shell (with heads if preferred)
1 scallion cut into 1 inch sections
1 slice of ginger cut into strips

Dipping Sauce:

4 Tbsp soy sauce                                   1 slice ginger, minced                            1 Tbsp vinegar
1 tsp sugar (optional)


Shrimp must be very fresh.  Do not shell.  Wash and rinse in cold water.  Drain.  Put shrimp in single layer around bottom of a large casserole dish.  Add ginger and scallions.  No oil, salt or soy sauce is needed.
Cover loosely with wax paper.  Microwave 2 minutes at high.  Stir and rearrange the shrimp.

Microwave for another 2 minutes at high.  Stir and let stand uncovered for 2 minutes.

Shell and dip in sauce to eat.
