Shellfish & Cucumber

Shellfish & Cucumber Salad
(Makes 4 Servings)

12 oz (3 cups) mixed shellfish (shrimp, crab, lobster, scallops, etc.)
1 cucumber                                                  1 tsp ginger, finely chopped                      1 to 1¼ Tbsp soy sauce
1 to 1¼ Tbsp vinegar                                    1 tsp sugar                                                 3 to 3¾ Tbsp oil
salt & pepper to taste                                 lettuce or Chinese cabbage


Cut the shellfish into bite-sized pieces.  Peel the cucumber and cut into matchstick strips.  Set aside.  Mix together the ginger, soy sauce, vinegar, oil and sugar.  Add the mixed shellfish and toss together with the dressing.  Arrange a bed of lettuce or Chinese cabbage leaves in a serving bowl.  Put the cucumber on top in a ring and place the mixed shellfish inside the ring of cucumber.  Chill before serving.
