Sambar (Red Lentil Puree Soup)
(Makes 4 Servings)
3 oz sorted uncooked red lentils 1 hot green chili, seeded/minced2 packets instant vegetable or chicken broth seasoning mix 1 cup diced onions1 cup diced red or green bell pepper 4 coriander seeds2 to 3 cloves garlic, chopped 2 cups of waterGarnish: lime slices and cilantro or Chinese parsleyDirections:Rinse lentils under running cold water. In a 3-quart saucepan, combine lentils and water and bring to a boil; stir in onions, garlic, and broth mix and return to a boil. Reduce heat to low, cover and let simmer until lentils are soft (30 to 40 minutes).Let cool slightly then transfer mixture to a blender container and process until pureed, scrapping down sides of container as necessary. Return puree to saucepan and stir in remaining ingredients (except garnish). Let simmer over low heat until bell peppers are soft (about 15 minutes). Serve garnished with lime and cilantro.
