Salmon Stuffed Tomatoes
(Makes 3 Dozen)
36 cherry tomatoes 2 (8 oz) pkgs softened cream cheese*2 Tbsp chopped fresh chives 2 (4 oz) pkgs Norwegian smoked salmon*dash of Worcestershire Sauce small amount of chopped chives* This recipe can be altered based on strength of salmon desired. I have made this recipe 2 parts cream cheese to 1 part smoked salmon as a nice blend for the average person. Try starting with less salmon and increasing a little at a time to taste.Directions:Wash and stem the cherry tomatoes. Hollow out the centers with a serrated grapefruit spoon. Turn tomatoes upside down on paper towels to drain for about 15 minutes. With a fork, mix softened cream cheese and smoked salmon until well blended and smooth. Add a dash of Worcestershire Sauce and chopped chives; blend mixture smoothly. Fill the cherry tomatoes with desired amount of filling and chill for at least 15 minutes before serving.
