Lettuce & Fillet of Fish Soup

(Microwave - Makes 2 to 3 Servings)
1 lb fillet of flounder, cut into about 2 inch sections 2½ cups water1 tsp cornstarch mixed with 1 Tbsp water 1 Tbsp oil4 to 6 tender lettuce leaves, torn into small pieces 1 scallion, chopped1 slice ginger cut in strips 1 tsp sherry1 Tbsp soy sauce dash salt & white pepper to tasteDirections:Mix the sherry with the cornstarch and then add fish. Coat well. Tear the lettuce leaves into small pieces by hand. Put the lettuce leaves along with 1 Tbsp oil into a microwave safe pitcher/container and mix well. Cover and microwave for 2 to 3 minutes on high. Add the 2½ cups water, ginger, soy sauce, salt and white pepper to the lettuce. Cover and microwave for 6 to 8 minutes or until boiling.Be careful of hot steam when removing cover. Add the fish and the scallions to the soup. Cover and microwave for another 4 to 5 minutes or until boiling to cook fish through. Stir and let stand for 2 minutes before serving.
