(Makes 12 Servings)
1 can (15 oz) garbanzo beans ¼ cup Tahini (sesame paste) 3 Tbsp lemon juice
¼ tsp ground cumin 1 large clove garlic, cut in thirds salt and pepper to taste
Optional garnishes: Olive oil and/or chopped parsley and paprika.
Directions:
Drain garbanzos, reserving liquid. Put garbanzos into a blender or food processor. Add Tahini, lemon juice, garlic, cumin, and ¼ cup of the reserved garbanzo liquid. Whirl, adding more liquid if needed, until mixture is a smooth consistency of heavy batter. Season with salt and pepper. Garnish as suggested above. Serve as dip for pita bread or cut fresh vegetables.
