Cucumber Sambal

Cucumber Sambal

2 large cucumbers, pared, seeded, and grated                       1 ½ tsp each, lemon juice and soy sauce
½ tsp each, salt & cider vinegar                                                 1 Tbsp seeded minced hot red chili pepper
¼ cup thinly sliced scallions                                                        Dash ground or crushed red pepper (optional)


In a small bowl, combine the cucumbers, salt, and vinegar and let stand for 30 minutes.  Transfer to colander or sieve and squeeze out as much liquid as possible from cucumber mixture.
In a medium bowl, combine the cucumbers, scallions, chili pepper, lemon juice, and soy sauce and mix well.  Let marinate at room temperature for 30 minutes.  Stir again, transferring to serving dish and, if desired, sprinkle with red pepper.
