Crabmeat & Cucumber

Crabmeat & Cucumber Salad

(Makes 2 to 4 Servings)

6 oz fresh or defrosted frozen crabmeat                          1 large cucumber                     1 Tbsp soy sauce
1 tsp vinegar                                                                        ½ tsp sugar                              ½ tsp ginger, minced
1 Tbsp sesame oil


Peel cucumber and cut it crosswise into 2-inch sections.  Scoop out and discard seeds.  Cut the sections into thin slices and then cut the thin slices into slivers.  In a bowl, combine soy sauce, vinegar, sugar, ginger, and oil.  Break large pieces of crab into smaller strips and combine with the cucumber.  Just before serving, pour in the soy sauce dressing and toss.  Arrange on a plate and serve at room temperature.
