Crab Stuffed Mushrooms
(Makes 8 Appetizer Servings)
¾ lb large mushrooms 1 (8 oz) pkg cream cheese ¼ tsp garlic powder
½ lb crab meat 2 Tbsp grated parmesan cheese Paprika
½ cup finely crushed croutons
Rinse mushrooms clean and remove stems. Discard stems or save for another use. Mix cream cheese with crushed croutons and garlic powder until fluffy. Pick over crabmeat, removing all cartilage. Stir into cheese mixture. Place mushrooms on a baking sheet. Place a spoonful of the crab mixture in the center of each, mounding slightly. Sprinkle with parmesan and dust with paprika. Broil until piping hot, about 5 minutes. Watch carefully so they don't burn.
These savory morsels make a good beginning for a brunch featuring an asparagus and cheddar quiche, Canadian bacon, fresh fruit compote, champagne and a gooey dessert.
