Chili Cheese Appetizers

Chili Cheese Appetizers

10 eggs                                           8 oz can diced Ortega Chili                     1 lb grated Monterey Jack Cheese
1pint cottage cheese                     1 cup butter ½ cup flour                           1 tsp baking powder
⅛ tsp salt


Melt butter in 13 x 9 inch pan.  Beat eggs until thick and fluffy.  Add flour, baking powder, and salt; blend well.  Add the melted butter from the pan but leave the pan coated.  Add the chilies, cottage cheese, and grated cheese.  Pour into the now pre-buttered pan and bake for 15 minutes at 400ºF.  Reduce heat to 325ºF and bake for another 40 to 45 minutes.  Cut into bite-sized squares and serve warm.

Watch when baking.  Time and temperature may vary.  I test for doneness as for custard.
