Chicken Jubilee
(Makes 6 Servings)
1½ lbs chicken cutlets ¼ cup unbleached flour ½ tsp salt½ tsp pepper 2 tsp canola oil 3 Tbsp brandy1 Tbsp cherry preserves (jam) 9 oz can of dark cherries (reserve the liquid)Directions:In a plastic bag, combine the chicken cutlets with the flour, salt and pepper. Shake to coat well. Heat the oil in a skillet over medium-high heat. Cook the cutlets on each side for about 4 to 5 minutes. Remove the chicken from the skillet to a serving platter and keep warm. Add the can of cherries with reserved juice (to taste), the preserves (jam or jelly), and the brandy to the skillet. Bring to a boil and boil for 1 minute. Spoon this cherry mixture over the chicken and serve.
