Chex Carmel Crunch
(from Chex Cereal Brand)
2 cups Corn Chex cereal 2 cups Rice Chex cereal 2 cups Wheat Chex cereal
6 cups popped popcorn 2 cups pretzel sticks 1 cup honey roasted peanuts
½ cup packed brown sugar ½ cup light corn syrup ½ tsp vanilla
¼ cup butter or margarine (do not use spread or tub products)
Heat oven to 350ºF. Mix cereals, popcorn, pretzels, and peanuts in a large bowl. Heat brown sugar, corn syrup and butter/margarine to boiling in 1-quart saucepan over medium heat, stirring occasionally. Temove from heat, stir in vanilla. Stir into cereal mixture. Spread in large ungreased roasting pan. Bake 20 minutes, stirring after 10 minutes. Spread on waxed paper to cool. Store in airtight container. May also microwave sugar, corn syrup, butter and vanilla for 2 minutes or until boiling, stirring after 1 minutes. Stir into cereal mixture and microwave all for 5-6 minutes. Spread on waxed paper to cool.
