Cherry Cream Cheese

Cherry Cream Cheese Spread
(Makes 1 Cheese Ball or Log)

This unusual combination will delight your guests.  Toasting enhances the flavor of most nuts -- spread them in a single layer on a cookie sheet and bake at 350ºF for 10 to 15 minutes, stirring occasionally until golden.

½ cup sliced toasted almonds*                    ½ cup Grand Marnier liqueur               2 pkgs (8 oz) cream cheese
1 cup chopped toasted almonds                 Selection of mild-flavored crackers
1 cup pitted Bing cherries (frozen or canned), thoroughly drained.


Cover cherries with liqueur and refrigerate for 24 hours.  Drain and discard liqueur.  Beat cream cheese with an electric mixer until fluffy.  By hand, stir in cherries and almonds.  Using plastic wrap, shape mixture into a ball or log.  Wrap and store in the refrigerator for up to two weeks.
